Sweet Chicken Adobo



  • 1 kg. Chicken (leg quarters or small thighs)
  • 1 head Garlic (sliced)
  • 1/3 Datu Puti Soy Sauce
  • ½ cup Datu Puti Vinegar
  • 2 tbsp. Brown Sugar
  • 1 cup Water
  • ¼ tsp. Peppercorn
  • 2 Bay Leaves
  • 2 Sweet Potatoes Medium size, peeled and cut into cubes
  1. Mix the water, Datu Puti Vinegar, Datu Puti Soy Sauce, and water together in a large container, and add the chicken leg quarters or thighs to marinate. Leave in the refrigerator for 2 hours.
  2. Peel and cut the sweet potatoes into medium sized pieces.
  3. Heat the pan over medium to high heat, remove the chicken from the marinate and place the chicen leg quarters or thighs in the to brown them from the fat of the chicken skin. Add a dash of oil if opted.
  4. Add the sweet potatoes to the pan, followed by the marinade and other ingredients.
  5. Cook covered for around 45 minutes to an hour over low heat, until the sauce thicken and all the chicken leg quarters or thighs are coated and cooked in the sauce.
