Pescado Adobar



  • 1 pc. Fish Fillet
  • 2/3 cup Datu Puti Soy Sauce
  • 1/3 cup Datu Puti Vinegar
  • 1/3 cup Coconut Wine (Pure Tuba)
  • 5 cloves of Garlic
  • 1 tspn. Granulated Pepper
  • 1 tbsp. Cooking Oil
  • 3 pcs. Laurel Leaves
  • 2 cups Water
  • 3 tbsp. Cornstarch
  • Sugar
  • Spring Onion
  • Oregano
  1. Put the fish fillet in a container then pour 2/3 cup Datu Puti Soy Sauce, 1/3 cup Datu Puti Vinegar and 1/3 cup coconut wine. Add 1 tbsp. pepper, 3 pcs. laurel leaves, 5 cloves of garlic, 2 cups of water and 3 tbspn. sugar (may vary depending on your taste). Cover and marinade the fish in the refrigerator for 2-3 hours.
  2. Remove the fish from the marinated sauce and add 2 tbspn. cooking oil, saute fish on a low heat frying pan.
  3. Add 3 tbsp. cornstarch, 2 tbpsn. sugar and bring the marinated sauce to a boil over medium heat. Lower the heat. Cover and let simmer until the sauce become thick. Put a small amount of Adobar Paste on the top of the sautéed Fish Fillet. Add a small amount of chopped spring onion and a pinch of oregano.
