Adobo sa Puti



  • 2 tbsp. Oil
  • 1 Onion, peeled, sliced thinly
  • 1 Garlic peeled, minced
  • ½ kg. of Pork
  • 1 cup of Datu Puti Vinegar
  • 2 cups of Water
  • 3 Bay Leaves
  • Small amount of Salt
  • 1 tbsp. Datu Puti Patis
  • 1 tsp. Pepper
  • 1 tsp. Sugar
  1. In a pan over medium heat, heat oil. Add onions and garlic and cook, stir regularly. Add pork and cook until lightly browned.
  2. Add Datu Puti vinegar and bring to a boil, uncovered and without stirring, for about 5 minutes. Add water, salt, bay leaves and peppercorns and stir to combine. Add the Datu Puti patis, continue to boil for about 3 to 5 minutes. Lower heat, cover and continue to cook for about 40 to 50 minutes or until meat is fork tender and liquid is reduced.
  3. Add sugar and stir. Continue to cook, uncovered, until mixture begins to render fat.
  4. Ready to serve.
